Basque chef Ricardo Monje Sagués has taken inspiration from the Eastern Mediterranean, showcasing organic, seasonal produce grown in Aiyanna's own garden in dishes like mezze sharing platters and superfood salads.
Vegans and vegetarians are well-catered for at Aiyanna Ibiza, but there's plenty, too, for those who love ethically-reared and sourced seafood and meat: think Spanish black rice with cuttlefish and fried squid, or spiced lamb brochettes.
