Throughout his career, he has led prestigious restaurants in Mallorca, where he unleashes his creativity by blending modernity and tradition to showcase local products. He also has extensive experience as a consultant in the fields of gastronomy, hospitality, and the food industry, both nationally and internationally.
On the other hand, Alejandro Sobreviela, head chef of Villa Mercedes, has focused his professional career mainly in the Balearic Islands, thereby endowing his cooking with a Mediterranean style that seamlessly fuses with global influences, drawing from a classic foundation to incorporate new techniques.
Throughout his career, he has worked at Michelin-starred restaurants in Mallorca and Valencia and has led the kitchens of several restaurants in Ibiza.
