Madunia: A new gastronomic star rises in the west

Ensconced in the hills high above Cap Negret, overlooking Ibiza’s magnificent west coast, with its breath-taking sunsets, Madunia is a new restaurant where sun, sea and culture meet.

Set to open on 8 June, Madunia - whose name derives from 'Mama Dunia' or 'Mother Earth’, reflects the establishment's deep connection with the island on many levels. 

Exquisitely landscaped, every aspect of it is meticulously integrated into the natural surroundings, whether that’s the outside garden restaurant that can host up to 250 diners, offering panoramic views of the coastline below or the indoor venue - with capacity for 60 diners - whose rooftop terrace affords unbeatable visits of the west coast’s world-famous sunsets.

It is this seamless integration with the environment that’s one of the restaurant’s most remarkable aspects. Despite the challenges of the hilly terrain, the architects have managed to create intimate dining areas on different levels, preserving the astounding views. The overall effect is inspired by the use of organic shapes, rich, earthy tones and consciously chosen materials. Its aesthetic appeal extends to the carefully curated colour palette and ample use of handcrafted elements, highlighting its masterful balance between luxury and nature.

When it comes to the cuisine, Madunia’s close connections with Ibiza and its glorious biodiversity are at the heart of this exciting new concept. The result is dishes and drinks that perfectly complement the restaurant's unique setting. Madunia’s kitchen takes a micro-seasonal approach, using the freshest produce supplied by a network of local fishermen, master butchers and farming cooperatives to make the best of the island’s abundance.

In practice, that means lots of open-fire cooking - the Josper grill is a key element - to produce a menu boasting bold, surprising dishes, simply and purely presented, and wines and cocktails that emphasise local flavours and ingredients in a colourful celebration of the white island’s cornucopia.

As Executive Chef Ivan Arauz Beusink points out, “Madunia’s menu complements the traditional, leisurely Spanish way of dining: flavourful, shareable dishes savoured in the company of friends and family. Our approach means that whatever Mother Earth offers us in each season of the year will find its way onto our guests' plates."

It’s an attitude shared by General Manager, Claudio Trovato, whose expertise, passion and dedication - accumulated over 15 years on the island - position him as the driving force behind the Madunia dining experience.

"Madunia is more than just a restaurant; it's a celebration of flavours, cultures and moments shared around the table," Claudio explains. "Our vision is to serve dishes that narrate the story of the island in a stunning, unconventional venue”.
