BiBo Ibiza Bay is a pop-up dining experience created by the popular Spanish chef Dani García, occupying the third restaurant space at the luxury gastronomic oasis, Nobu Hotel Ibiza Bay in Talamanca.
A marriage of flavours, BiBo meets Nobu unites the creativity of both chefs and pays homage to their focus on superior products, global influences and exquisite attention to detail in three limited edition dishes:
Chilorio Burritos
A Nobu twist on one of the bestselling dishes on BiBo’s Mexican menu, adding Karashi Su Miso to the chilorio mix with Nobu’s anticucho sauce and finished with a crispy shiso leaf.
Ensalada Rusa a la Japonesa
Archetypically Andalusian, this is an ensalada rusa like no other. Infused with Nobu’s ultimate signature dish – Black Cod Miso – this is a hedonistic take on a Spanish classic.
Tuna Tartar Crispy Rice
Tuna holds a special place in the hearts and kitchens of both Nobu-san and Dani García. Nobu’s innovative Crispy Rice dish meets BiBo’s refreshing tuna belly tartar marinated in soy, sesame yuzu and a cured egg yolk.
